Feta cheese and spinach parcels

One of Slovenia's best-loved dishes is Gibanica, which is like a baked cheese strudel, made with layers of cheese and filo pastry. This healthier alternative is made with feta cheese, which has a much lower fat content than cream cheese, while the spinach adds fibre and additional nutrients, including vitamin C and iron.

Ingredients

Makes 10
Per portion: 110 kcal, 4g protein, 9g fat, 4g carbohydrate

300g spinach
150g feta cheese or 75g feta and 75g Cheddar cheese, grated (optional)
1 tsp nutmeg
10 sheets of filo pastry
2-3 tbsp olive oil spread, melted

Method

Pre-heat the oven to 200°C or Gas Mark 6

Place the spinach in a pan with a little water and cook gently until heated through and wilted.

Drain the spinach and add the feta cheese (and Cheddar cheese, if using) and nutmeg. Combine thoroughly.

Roll out the filo pastry and brush the top with the melted spread. Lay another sheet on top and brush again. Cut the pastry into strips 7cm by 20cm.

Place a heaped teaspoonful of the spinach mixture in the top corner of each strip and fold over diagonally to form a triangle. Continue to fold over until you have used up the strip.

Place the triangles on a large baking sheet and bake in the pre-heated oven for about 15 minutes until a light golden brown.
