Stuffed dates

Stuffed dates are a popular treat in Algeria. Dates are extremely nutritious; they are a rich source of iron and calcium and their high fibre content can help alleviate constipation and keep the bowel healthy.

Ingredients

Makes 16
Per portion: 55 kcal, 1g protein, 2g fat, 10g carbohydrate

16 dates
40g marzipan
2 tbsp mascarpone
1 tbsp chopped walnut pieces
1 tsp honey

Method

Split the dates lengthways along one side and remove the stones.

Cut the marzipan into 8 cubes. Take a cube and roll it gently between the palms of your hands into a finger shape. Place the marzipan into 8 of the dates.

Place the mascarpone in a bowl and mix in the chopped walnuts and honey. Fill the remaining dates with a teaspoon of the mixture.
